Nice pans, but lose nonstick fairly quickly

Initially I was quite happy with the pan. They are good quality and cook evenly. The non-stick surface worked well.

After about 6 months however the nonstick surface did not work very well any more. I wash them by hand, and only use plastic utensils to avoid scratching. I was disappointed by how quickly the nonstick surface was lost. I later looked on Consumer Reports, and found that they also say they have poor nonstick durability.

Great heat, not so great non-stick

I bought a set of these Cuisinarts about 9 months ago. This skillet was included in the set, as well as a smaller one and several pots.

Pros:

Excellent heat conduction. Stays hot, cooks evenly and transfer from oven to stovetop and back is very convenient.

Cons:

The nonstick coating is not really working anymore. Though these have never been in the dishwasher or been scrubbed with anything heavier than a sponge, the nonstick coating has slowly burned off in patches, and now, though it hasn’t peeled or flaked, there are spots where the food will stick and nonstick spray or oil must be used. This is a pity because I was very careful not to overheat the pans–they have really been babied. I will probably buy another Cuisinart though, but this pan will need to be replaced within a few months.

Right Tool for the Right Job

Like all tools in the kitchen, this one has the exact qualities that make it a phenomenal wok that’s representative of CAST IRON cookware.

A. It’s heavy cast iron, which means it retains heat exceptionally well. Because of the high thermal mass, you’ll have to be patient as the wok takes a few minutes to heat up while on the stove. After it heats up, you’ll be rewarded with long-lasting high temperature heat (if desired… it’s really for you to control… steady medium or low is very attainable, too) perfect for doing restaurant-style stir-frying at home. That is, you can toss food in the pan without worrying that the pan will cool off and boil/steam your food with the escaping moisture. Searing on the home stove is well within this wok’s capabilities. All of this just requires patience.

B. It’s a wok, which means that the heat is concentrated at the bottom and tapers off going up the sides. You control how you cook your food by where you situate it relative to the bottom/center. The non-slippery surface of the wok makes this possible, since you can slide food up the sides to reduce the amount of heat it gets exposed to, and the food will stay, rather than fall back down to the bottom, like a teflon-based non-stick surface.

C. It’s pre-seasoned, so it’s fairly non-stick. I have yet to experience having anything completely stick to it while cooking, whether it’s coated meat, stir-fry, vegetables, or egg scrambles.

Because it’s heavy cast-iron, you get all these benefits that you don’t find with the typical woks you see in the marketplace. Compared to traditional woks, this is not one that you’ll be handling while you’re cooking. Once it heats up, it gets hot… real hot… including the handles. You’ll be scooping food out of it rather than pouring food from the wok to a plate, and you’ll be leaving it on the stove over dinner until the thing cools down enough to handle. BE CAREFUL! (wouldn’t want anyone to experience any nasty surprises)

Also, since it’s cast iron, this piece of cookware requires a bit more TLC than your ordinary anodized aluminum/teflon-coated cookware. You won’t be washing this with soap, rather Lodge recommends hot water and a stiff brush, and you’ll need to keep it dry and seasoned (rubbed with oil) when you’re storing it. It’s a bit of extra work, but to me, it’s completely worth it as even quality teflon-coated pans will wear out far sooner than well cared for cast iron cookware.

At the end of the day, I still use my anodized aluminum/teflon-coated cookware when what I’m cooking calls for it. I reach for my cast iron pieces to do the job they’re best suited for… anytime I need steady heat, high temperature cooking, and/or searing capability. It’s just a matter of using the right tool for the right job.

Honestly, I’m so glad Lodge makes affordable cast iron cookware. I’ve been wanting to pick-up some cast-iron pieces for a while. Until I found Lodge via Amazon.com, I have always turned away disappointed when I see how much Le Creuset costs at retail stores. Thanks, Lodge & Amazon.com!

The Only Reliable Wok for the Typical American Stove

Unless you have a professional quality cooktop (Garland, Wolf, etc.), the typical American stove does not produce enough BTUs to properly heat the traditional rolled steel wok. No matter how long you heat it, it will cool too quickly and the food will boil instead of sear.

However, a pre-heated (I give it at least 10 or 15 minutes) cast iron wok holds on to enough heat to enable you to properly stir-fry. And cleaning is not that bad. After removing the food throw in a cup or two of very hot water and scrub with a stiff, non-nylon (it melts) kitchen brush (a grill brush is ideal). Pour out the dirty water (ok, this is a trick because of the weight), put it back on the heat to boil off any excess moisture, and wipe it with an oiled paper towel and let cool.

By the way, if you like to deep fry, a cast iron wok runs circles around most any fry rig and requires less oil. In fact, deep frying is a great way to season or re-season the wok.

If you want a wok with less maintenance, anodized aluminum (Calphalon, Circulon, Analon, et al) is really your only other choice. It does not sear quite as well because it does not have the same heat retention, but it does a good job because it is so thermally conductive liquid evaporates before it can pool. It works especially well with vegetables and white meats. A little hot water, dishwashing liquid, and a scrubby sponge is all you need.

Best WOK ever…

So I’ve had a dozen or so WOKs but none that hold the heat so well and cook so evenly. I use it mainly on the gas burner with the high heats, where all the others just don’t do well at all, and am thoroughly impressed by it.

The flat bottom does justice when on a traditional electric range and is just as effective in cooking.

I wouldn’t buy any other WOK after getting this one, unless of course I need a second duplicate one.

Great Seller

The product arrived quickly, well packaged, and as advertised. I would definitely recommend this seller. However, I am not pleased with the manufacturer, Jarden. These lids are the same as the Ball lids. They just come in a box that say Kerr. I was looking for the old type Kerr lids with the raised letters stamped, “Kerr.” They always sealed better for me. They are apparently no longer available – Sad.

Wall Mounted Pot Rack

Among pot racks, some hang from the ceiling and others mount on the wall. This Cuisinart Oval Rack mounts on the wall and is exactly what I wanted since I’m still apartment-living (I don’t have a big kitchen). In other words, it’s a great space saver and fits almost anywhere. I’ve hung it over my stove once, and now have over my sink. The rack is made of solid stainless steel and is strong enough to hold any pot, so long as it is mounted properly. Make sure it is mounted into the studs inside the wall. So, installing it can be tricky if you’re not familiar with a drill and stud-finder. The one problem is that the unit has three predetermined holes for mounting and you’ll be lucky if two holes match the location of the studs. I’m extra cautious (and I live in earthquake country) so I mount to a solid somewhat longer peice of wood, then mount that wood to the wall. The unit comes in two pieces and is shiny and sleek. It gives a “Gourmet Cook” impression. It comes with five or six pot hooks (I can’t remember) but that’s plenty giving the overall size of the unit. I would buy it again.

Cuisinart Cookware Rack

I really like this rack a lot. It suited my needs. I have high ceilings so had to find one that went against the wall as apposed to hanging from the ceiling. It holds 5 or 6 pots and pans easily and looks nice and organized. It is very simple and not bulky.

Circulon non-stick fry pans

Most of the reviews we read were in praise of these pans. We agree. However, initially, upon receiving the pans, we were sceptical as the instructions said quite clearly – Do Not use high or medium high heat when using the pans. Whoever heard of not using high heat on a fry pan? However, we have followed the instructions and use low to medium heat as we begin heating the pans and they do heat up nicely and evenly.

It also said not to use non-stick cooking spray on the pans as that might deteriorate the effectiveness down the road. I must admit, you do not have to use PAM or other non-stick sprays and the pans work quite well and clean up very nicely with a little soap and water, sometimes water alone. We have used butter or olive oil though and both work well.

We think the pans will be just fine now that we have gotten use to working with them. We would recommend them, especially at this price point for 3 pans.
Downside – no lids, but you may already have lids in your kitchen that can fit.

Circulon and on!

Bought this set as a replacement for some much older Circulon pans that had served us well. They were over 10 years old, and were staring to show wear inside the pan. They are our most used pan, seeing several uses per week for breakfast, frying burgers, chicken cutlets and the like.

There was thought about buying a ‘better’ brand, however after much searching and rejecting, we finally found the replacement from the company that made our last set of pans.

We like the design because of the short, steep sides. They are deep enough for things like scrambled eggs, yet shallow enough to get a spatula in to flip a pancake. The steepness makes the usable flat surface at the bottom seem like it’s a bigger diameter pan.

I’ll confess I did not buy the pans from Amazon. It’s one of those things that for me has a lot of personal choice involved. If you’re picky, I’d recommend going to see them in a store first before buying them. See how they feel in your hand.

you can find a replacement lid

I wanted a four-quart pot with a handle for cooking pasta–but not a “stock pot” with two small handles on either side. This pot is wonderful–since it is the Farberware classic style. YOU CAN FIND A REPLACEMENT LID (without a hole) to fit this pot through JCPenney, search for replacement lid, and select the 8 inch size. The lid comes from the manufacturer “Farberware” and while it is not the “classic” style, it fits great.

Just right for me!

I’ve used this kind of deep-fryer a lot; it’s the kind my mother used when I was growing up. I have lots of Farberware, so I know I will love it. When I first bought my Farberware 4-qt. saucepan, there was a choice of the long handle or two small ones. I bought the one with two small handles and I’ve always been sorry I didn’t get the other kind. I’ve been looking for one for a long time, and was told Farberware didn’t make them anymore (all they have now are the ones with two handles). So now–I’ll get the pan I want, and a deep fryer to boot, and if the hole in the top is a problem, I’ve already got one without a hole. And, if you’ve ever bought Farberware, you know that this is a great price on a great product.

Great cookware!

This cookware is great. We purchased our first set in 1991. Here is the kicker, the company stands behind the product. Just this month, Jan 2010, two of the skillets that are 19 years old started sticking. We sent them back to the company and they set us new ones. It doesn’t get any any better than that. The company stands behind the Lifetime warranty. If you want to purchase your last set of cookware, get Scanpan.

Great cookware!

We’ve had this cookware for 6 months now, and so far we’ve been very happy with our purchase. The nonstick works great – everything comes off with no effort at all, but you can still get a good sear on items if you need to, which wasn’t possible in our other nonstick. I’ve even burnt things in these pans and it came out like it was nothing! I love that Scanpans are environmentally friendly, and I’m hoping that I’ll never have to try out the return policy! So far I’ve not noticed any nicks on the edges, which typically is the first sign of aging. My only complaint is that the lids can get VERY hot, and with the smaller pans this can make them a little difficult to remove. However, even the lids clean up with little effort!

Nice looking set pots & pans

We’ve always loved scanpans. All their products have very durable non stick surface unlike normal teflon coated pots and pans. We purchased the professional set 8 months ago as we like the steel finish to the handles and lids. whilst we have no complains about the actual cooking surface, the biggest downside is that the metal handles on the pots and lids do heat up considerably. the set came with cloth holders etc, but it’s inconvenient to have to put them on each time. One of the holder actually caught fire on our stove from an adjacent burner. My mother also burned her hand once when she picked up a pan handle which was close to an adjacent burner which had been on. The lids will be too hot to touch if you’ve been cooking with it on, but the end of the pan handles are cool enough to touch regardless of how long you’ve been cooking for. Bottom line is if you have metal handles/lids, it will conduct heat.

Replaced an old opener

I had a Rival under the cabinet can opener that was terrific. It had a button to push to swing it up and out of the way when not in use. The Black and Decker is larger but fits well under the cabinet. So far it has proved to be very effecient. I haven’t tried the bag opener yet but all in all it is a good product.

Poor design for under counter

It is impossible to install this opener under the counter where it can operate without the counter above not preventing easy operation. This, I believe, is due to the placement of the installation screws.
My wife complained about it, and wanted me to have the old B&D opener fixed and put back where it was.
I then tried to operate it, and even had trouble placing the can where it would work, and had to spring it to get the can off. I think I am generous in giving it two stars, wish I had not bought it not. I think I will look for a swing-out wall-mounted manual one like we had when I was a child – 50 or 60 years ago.

I am very disappointed in this Black & Decker product. It was very hard to mount under the cabinet. Good luck in trying to open cans. It isn’t unusual to have trouble trying to get the blade to line up and open the can. I am sorry that I ever bought this product

not for flat stoves

I only rated this 2 stars because it isn’t designed for a flat stovetop. The large can itself isn’t flat on the botton (not even close) so no or little heat will transfer to the metal, ultimately to the water. If that tidbit had been listed in the product features I would have kept shopping for one that was flat on the bottom.
